Applesauce or Mince Cake

1 egg, beaten
1/3 c. Wax Orchards Fruit Sweet
2 Tbsp. canola oil
1 c. Wax Orchards Apple Butter
1 1/2 c. flour
1 1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 c. raisins
3 egg whites

Combine wet ingredients. Sift flour, baking soda, & cinnamon. Add raisins to dry mix and blend. Stir  dry mix into wet mix. Fold in beaten egg whites. Pour batter into greased 9" pan or bundt pan and bake at 375 degrees for 30-35 minutes. Turn out and cool. Best served the next day. Serves 9.

Exchange: 1 slice = 1 1/2 fruit, 1 starch, 1 fat. Carbs: 37 grams. Protein: 4 grams. Fat: 4 grams.

Orangeberry Sorbet

1 c. Wax Orchards Raspberry Berry Spread or syrup.
1/4 c. concentrated orange juice
3/4 c. apple juice

Blend and freeze, stirring occasionally, or use a small crank freezer. This refreshing raspberry-orange blend is a favorite at Wax Orchards!

Exchange Per Serving: 1 fruit. Calories: 70.

Fruit Leather

Place a sheet of plastic wrap in the bottom of a cookie sheet. Smooth on a thin layer of your favorite flavor of Wax Orchards Fruit Butter with the edge of a pancake turner. Oven-dry at about 120 degrees for approximately two hours or until dry. Remove and cool. Peel off fruit leather and roll in plastic wrap. For variety, sprinkle with finely chopped walnuts before drying.

Pumpkin Pie


2 eggs
1/2 tsp. cinnamon
1/8 tsp. ginger
1/8 tsp. cloves
2 c. pumpkin
1 c. Wax Orchards Fruit Sweet
1 1/3 c. whole milk or milk substitute
1 9" pie shell
pinch of salt

Beat eggs, spices, and salt until well blended. Add pumpkin and stir. Pour in Wax Orchards Fruit Sweet and milk. Stir until well blended. Adjust with milk or cream to desired richness. Pour filling into pie shell and bake at 350 degrees for 35 minutes or until a knife inserted into the center comes clean. Serves 8.

Exchanges: 2 starch/bread, 1/2 fruit, 2 fat. Calories: 244.

Sweet Heart Granola*

2 c. rolled oats
1/8 c. canola oil or light olive
1/3 c. Wax Orchards Fruit Sweet
1/2 c. Grape Nuts cereal (sugar-free)

Add oil to rolled oats. Mix/rub with hands to coat oats thoroughly. Add Wax Orchards Fruit Sweet and stir well. Add Grape Nuts and mix. Spread on a cookie sheet. Bake at 300 degrees for about 40 minutes, turning occasionally until lightly browned. Be careful not to over- brown. Raisins and/or nuts can be added to taste and calorie needs.


Granola Scones*

1 1/2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1 c. Sweet Heart Granola (above)
1/3 c. Wax Orchards Fruit Sweet
1 Tbsp. Canola oil
1 egg white
1/2 c. non-fat, plain yogurt
2 Tbsp. skim milk
1/4 c. chopped dates

Combine first four ingredients and blend well. In separate bowl, combine Wax Orchards Fruit Sweet, oil, yogurt, and egg white. Beat well and add to flour mixture. Add enough milk to make mixture doughy, but not sticky. On floured board or cloth, knead dough until smooth. Transfer to baking sheet which has been sprayed with non-stick cooking spray. Bake 10-15 minutes at 375 degrees or until golden. Cut into 10 wedges.

Exchanges per wedge: 1 fruit, 1 starch/bread, 1/2 fat.

Ski Day Cookies*

1/2 c. Wax Orchards Fruit Sweet
1/2 c. peanut butter
1 egg white
3 Tbsp. water
1/8 tsp. salt
2/3 c. flour
1/2 c. oat bran
1 c. Sweet Heart Granola (above)
1/3 c. currants

In a medium bowl, combine  Fruit Sweet and peanut butter. Stir well. Beat in egg white and water. Separately, combine salt, flour, and oat bran. Add to wet mixture. Stir in granola and currants. Drop by teaspoonfuls onto cookie sheet sprayed with non-stick coating. Flatten cookies with fork. Bake at 325 degrees for 6-8 minutes or until golden. Watch so they don't over bake.

Exchanges: 1 starch/bread, 1/2 fat.

Fudge & Peanut Butter Energies

1/2 c. Wax Orchards Fudge Fantasy Topping
1/2 c. peanut butter (smooth) 
3/4 c. Grape Nuts cereal (no sugar added)
2 Tbsp  powdered milk

This can be messy, so use a good plastic bag, bread bag size. Put the Wax Orchards Fudge Fantasy and peanut butter in the bag and moosh together. Add the Grape Nuts and powdered milk, knead in the bag. When the bag is clean inside, the candy is mixed. If the mixture is too dry or too moist, adjust with fudge or Grape Nuts. Roll or knead to 1/4" thickness while still in the bag. Chill overnight in freezer or refrigerator. Best in 24 hours when Grape Nuts are softened a bit, or use fresh for a very crunchy candy. Cut into squares, bag and all. (Please, don't forget to remove the bag before enjoying). Makes 30 servings, 1 tablespoon each).

Exchanges: 1/2 bread. 49 calories,  6 g. carb., 2 g. protein, 2 g. fat, 41 mg. sodium, 0 cholesterol.

Crispy Critters*

1/4 c. margarine
1/2 c. Wax Orchards Fruit Sweet®
1 egg white
1 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. vanilla
2 c. crisp rice cereal

Combine margarine and  Fruit Sweet in large bowl and microwave at high for 30 seconds. Remove from microwave and beat egg white into mixture. In small bowl, combine flour, baking soda, and salt, then add to batter. Gently fold in vanilla and cereal. Drop teaspoonfuls onto Teflon coated cookie sheet. Bake 6 minutes at 325 degrees.

Exchanges: 1/2 starch/bread, 1/3 fruit, 1 fat.

To Convert Your Own Recipes--

 

 

Substitute 2/3c.sweetener per cup of sugar in the recipe.  Reduce other liquids by 1/3 the amount of sweetener used.
