Whole Wheat Vegan Banana Bread Recipe

After several attempts to create an amazing vegan banana bread, I landed on this recipe. I wanted to make it vegan and gluten free, but this proved to be a little overly ambitions for me. I will try again, but in the meantime, this one was delicious!

Vegan Whole Wheat Banana Bread

Ingredients:

1/3 cup olive oil
½ cup Fruit Sweet
1 teaspoon vanilla
2 egg replacements (Red Mill used)
2 bananas, mashed
1 ¾ cups whole wheat flour
¼ teaspoon salt
1 teaspoon baking soda
¼ cup hot water

Preheat oven to 325 degrees F. Grease 9x5 loaf pan.

Mix oil, Fruit Sweet and eggs in large bowl. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix and add to batter.

Spread batter in loaf pan.

Bake about 55-60 minutes or until a toothpick inserted in the center of the loaf comes out clean.
